Cashew Chicken Casserole

Ingredients

  • 2 c uncooked elbow macaroni
  • 3 c cubed/cooked chicken
  • 1/2 c cubed process American cheese
  • 1 small onion, chopped
  • 1/2 c chopped celery
  • 1/2 c chopped green pepper (optional)
  • 8 oz. can water chestnuts
  • 10 3/4 oz. cream of mushroom soup
  • 10 3/4 oz. cream of chicken soup
  • 1 1/3 c milk
  • 14 1/2 oz. can chicken broth
  • 1/4c melted butter
  • 2/3 c crushed saltines (20 crackers)
  • 3/4 c cashew halves

Directions

  1. Layer 1st 7 ingredients in 13×9 baking dish.

  2. Combine the soups, milk and broth in a bowl

  3. Pour on casserole & refrigerate over night.

  4. Mix butter & cracker crumbs. Sprinkle on top.

  5. Top w/ cashews.

  6. Bake, uncovered at 350 for 40 min.

  7. *Put together the night before baking it!!!
