Pasta Frittata

Ingredients

  • 4 oz. thick-cut bacon, diced
  • cooking spray or margarine
  • Batter:
  • 4 extra-large eggs/ 5 large eggs beaten
  • 2 1/2 c half and half
  • 5 tsp. cornstarch
  • salt and white pepper
  • Pinch of nutmeg (optional)
  • 12 oz. cooked spaghetti in 2" pieces
  • 1/4 c sliced green onion
  • 1/4 tsp. white pepper
  • 1/4 c shredded Fontina cheese
  • Parmesan cheese

Directions

  1. Sauté the diced bacon until done. Drain.

  2. eheat oven to 350. Spray 1 1/2 qt. dish.

  3. Batter: Mix eggs, 1/2 & 1/2, cornstarch, plus salt, white pepper and nutmeg.

  4. Mix spag. onions, bacon and white pepper.

  5. Pour into baking dish. Pour egg mix over top.

  6. Bale for 25 min.

  7. Sprinkle w/ Fontina cheese. Bake until golden.

  8. Turn off heat & open oven door to dry Frittata

  9. Sprinkle w/ Parmesan & serve on warm plate.
