Country Fried Flounder

Ingredients

  • 2 LB flounder fillets
  • 1 c buttermilk
  • 1 c cornmeal
  • 1/2 c self rising flour
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1/2 tsp. pepper
  • 2 c vegetable oil for frying
  • 2 lemons, quartered

Directions

  1. Cut fillets into 6 portion. cover w/ buttermilk

  2. Refrigerate 1 hour.

  3. Combine cornmeal, flour, salt & spices.

  4. Coat drained fish on both sides w/ mixture.

  5. Lay out on plate & refrigerate 30 minutes.

  6. Heat oil. Fry fish. Turn once until golden.

  7. Drain on paper towels.

  8. Serve on a warm plate w/ lemon quarter.
