Puerto Rican Rice

Ingredients

  • 1 tbs canola oil
  • 1 1/2 cups white rice, uncooked
  • 1/2 tsp adobo seasoning
  • 1/2 tsp garlic powder
  • 1 1/2 tbs sofrito sauce
  • 1 (5g) packet goya sazon (coriander & annatto)
  • 1 (16 oz) can red kidney beans or pink beans (habichuelas coloradas)
  • 2 tablespoons sliced olives and half pimentos
  • 1/4 cup chopped ham

Directions

  1. coat bottom of pan with canola oil.

  2. add rice and stir.

  3. add adobe seasoning, garlic powder, and sofrito, stir.

  4. add beans and olives and pimentos.

  5. optional, add chopped ham

  6. add water to cover rice, add sazon, stir.

  7. cover on medium heat until half cooked, then stir rice and cover with foil and lid.

  8. cook for 10-15 min. on low. stir occasionaly.
