Lemony Dill Salmon Cakes

Ingredients

  • 8 oz. feta, at room temperature
  • 1/3 cup cream cheese at room temperature
  • 1 lemon, zested
  • 24 mini-pancakes (Aunt Gemima frozen)
  • 4 oz. smoked salmon
  • fresh dill

Directions

  1. In food processor whip cheese with zest 5 minutes. Season, Spread on pancackes; top with salmon and dill.
