Bistro Salmon

Ingredients

  • 3/4 cup lemon juice
  • 1 tbsp. Dijon mustard
  • 1 cup evoo
  • 4 oz sundried tomatoes
  • 4 oz pitted kalamata olives
  • 1 tbsp. capers
  • 1 tsp sea salt
  • 1/2 tsp freshly cracked black pepper
  • 4 (6-8 oz) salmon fillets

Directions

  1. Whisk together lemon juice and Dijon mustard, then add olive oil and whisk. Add tomatoes, olives, capers, salt and pepper.

  2. Arrange filets in a baking dish and pour sauce over top. Bake at 400 for 10 minutes.
