Jon’s cookies for Spanish class

Prep time: 30 minutes
Cook time: 45 minutes
Serves 36 people

Ingredients

  • 2 sticks butter, room temperature
  • 1/2 c sugar
  • 1 egg AND 1 egg yolk
  • 1 tsp. vanilla
  • 2 c flour
  • 1 c cornstarch
  • 1 tsp. baking powder
  • 1-2 c dulce de leche (from world foods store)
  • powdered sugar for garnish

Directions

  1. Cream butter and sugar.

  2. Add egg, yolk, & vanilla at medium.

  3. Mix separately flour, cornstarch and b.powder

  4. Add mixture to butter mix until dough forms

  5. Remove dough and divide into 2 balls.

  6. Wrap in plastic. Refrigerate 1/2hr to overnight

  7. Preheat oven to 350

  8. Roll out cold dough to 1/4" thickness.

  9. Cut w/ small round cutter.

  10. Bake on parchment paper lined cookie sheet

  11. Bake 15 min or until edges brown.

  12. Cool. Combine 2 cookies w/ dulce de leche

  13. Garnish w/ powdered sugar if desired.
