Sweet Corn Muffins

If made in 8×8 pan increase the baking time by 20 mins.

Serves 16 people

Ingredients

  • 1 1/2 cup flour
  • 2/3 cup sugar
  • 1/2 cup corn meal
  • 1 T. baking powder
  • 1/2 tsp. salt
  • 1 1/4 cup milk
  • 2 large eggs, lightly beaten
  • 1/3 cup canola oil
  • 3 T. margarine melted

Directions

  1. Preheat oven to 350 degrees.

  2. Grease pan.

  3. Combine flour, sugar, corn meal, baking powder and salt in medium bowl.

  4. Combine milk, eggs, canola oil, and butter in a small bowl; mix well.

  5. Add to flour mixture: stir just until blended. Pour into prepared muffin cups, filling 2/3 full.

  6. Bake for 18-20 minutes. Cool in pans for 5 minutes.

  7. Serve warm.
