Mum’s Christmas Cake

My mum’s favourite recipe, and my late brother was also a dab hand at this each Christmas too.
My brother was a ‘tee-totaller’ and when tidying up his garage cupboards one day with his son (my nephew), he brought out a brown paper bag containing a bottle of brandy, which he kept solely for the Christmas Cake. He didn’t want anyone else to know it was there, but had pointed it out to my nephew, in the event of having to clear out the garage ‘when he died’!! Bless him.

Ingredients

  • 225 g butter
  • 225 g brown sugar
  • 4 eggs
  • 2 T golden syrup
  • 1/2 C milk
  • 500 g flour
  • 1/2 t baking soda
  • 1/2 t cream of tartar
  • 1 t cinnamon
  • 1 kg mixed dried fruit
  • 1/4 C brandy

Directions

  1. Cream butter and sugar.

  2. Add eggs, singly.

  3. Add sifted, dry ingredients along with milk which has been mixed with the syrup.

  4. Lastly, stir in fruit and brandy.

  5. Bake in well lined 20 cm cake tin, at 160oC for approx 3 hours.

  6. While cake is still warm, brush top with additional 1 – 2 T brandy.
