Lemon Yogurt Cake

Another one of those sugar & lemon glazed cakes, to make use of the excess lemons!

Prep time: 15 minutes
Cook time: 45 minutes
Serves 12 people

Ingredients

  • 1 1/2 C flour
  • 2 t baking powder
  • 1/2 t salt
  • 1 C plain yogurt
  • 1 C sugar
  • 3 large eggs
  • grated zest 2 lemons
  • 1/2 C vegetable oil
  • Glaze:
  • 1/3 C sugar
  • 1/3 c lemon juice

Directions

  1. Sift dry ingredients.

  2. Mix yogurt, sugar, eggs, lemon zest and oil.

  3. Fold wet and dry mixes until combined.

  4. Bake in paper-lined round cake tin, or loaf tin, at 180oC approx 45 minutes.

  5. Cool in tin for 10 minutes.

  6. Pour lemon syrup over cake, allowing it to soak in.

  7. Glaze:

  8. Warm together sugar and lemon juice, until sugar is dissolved.
