Best ever Pikelets

My Mum was ‘famous’ for her pikelets and even though mine are pretty good, Mum’s were just the BEST!

Cook time: 10 minutes
Serves 20 people

Ingredients

  • 3 heaped T sugar
  • 1 large egg
  • 1 large C flour
  • 2 t baking powder
  • pinch salt
  • 3/4 C milk
  • knob butter, melted

Directions

  1. Beat together egg and sugar, until light.

  2. Add sifted dry ingredients, along with milk – may need to add little extra milk if too thick but don’t have mixture too runny.

  3. Lastly, mix in butter.

  4. Cook on very lightly greased pan, until bubbles form, turn and cook second side briefly.
