Fruit and Nut Loaves

One to eat fresh, second one to freeze.

Cook time: 40 minutes
Serves 24 people

Ingredients

  • 1 C dates, chopped
  • 1 C raisins
  • 1/2 C chopped nuts
  • 3/4 C sugar
  • 1 t baking soda
  • 1 T butter
  • 1 C boiling water
  • 2 C flour
  • 1/2 t salt
  • 1 egg, beaten

Directions

  1. In bowl, pour boiling water over first 6 ingredients.

  2. Add flour, salt and egg.

  3. Mix until combined.

  4. Bake in 2 greased, round ‘Nut Loaf’ tins at 180oC, approx 40 minutes.
