Queen Cakes

Bake these in Patty Pans, not regular Muffin or Cup Cake size tins

Prep time: 10 minutes
Cook time: 15 minutes
Serves 24 people

Ingredients

  • 1 1/2 C self raising flour
  • 2/3 C castor sugar
  • 125 g butter, softened
  • 3 eggs
  • 1/4 C milk
  • 3 T currants

Directions

  1. Sift flour into bowl, add remaining ingredients, except currants.

  2. Beat 3 minutes.

  3. Fold through currants.

  4. Bake heaped tablespoons of mixture in paper lined patty tins at 180oC, approx 15 minutes.

  5. Cool and dust with icing sugar to serve.
