Salmon Teriyaki

Ingredients

  • 1-1 1/2 pounds salmon fillet
  • 1/2 cup low sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 3 cloves fresh garlic
  • 1 tablespoon ground ginger
  • 1 1/2 cups thawed apple juice concentrate, but not diluted
  • 1/2 cup finely chopped scallions

Directions

  1. Divide salmon into 6 portions

  2. Place cloves of garlic in a blender and pulse on and off to chop

  3. Combine the remaining ingredients except the scallion in the blender and process until the ingredients are mixed well

  4. Add the chopped scallion

  5. Place the salmon in a 13×9 Pyrex dish and pour enough marinade over the fish to cover well

  6. Marinate at least 1 hour in the refrigerator

  7. Grill the salmon over hot coals for about 8-10 minutes

  8. Note: Fish can be baked at 350 degrees F for 10 minutes if you wish

  9. Great marinade for beef and chicken
