Cheddar and Ham Soup

Ingredients

  • 2 cups diced, peeled potatoes
  • 2 cups water
  • 1/2 cup sliced carrot
  • 1/4 cup chopped onion
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 cups shredded Cheddar
  • 1 1/2 cups cooked ham
  • 1 cup frozen peas, thawed

Directions

  1. In a large saucepan, combine potatoes, water, carrot and onion; bring to a boil.

  2. Reduce heat, cover and cook 10-15 minutes.

  3. Meanwhile, in another saucepan, melt butter.

  4. Stir in flour until smooth.

  5. Gradually add milk, salt and pepper.

  6. Bring to a boil; cook and stir for two minutes or until thickened.

  7. Stir in cheese until melted.

  8. Stir into undrained potato mixture.

  9. Add ham and peas; heat through.
