Orange Cupcakes

Serves 12 people

Ingredients

  • 1 1/4 C sugar
  • 250 gr sour cream
  • 1 1/2 T orange zest
  • 3 eggs
  • 50 g butter, melted
  • 1 1/2 C flour
  • 1 t baking powder
  • 1 t baking soda
  • Icing:
  • 2 T butter
  • 2 T orange juice
  • 2 C icing sugar

Directions

  1. In food processor, process first 3 ingredients.

  2. Add eggs, singly.

  3. Add remaining ingredients and pulse just to combine.

  4. Bake in paper lined cup cake pans at 180oC approx 15-20 minutes.

  5. Cool, then ice.

  7. Blend ingredients together until smooth.
