Chocolate and Cherry Cupcakes/Muffins

Serves 12 people

Ingredients

  • 65 g butter
  • 1/4 C castor sugar
  • 1 egg
  • 1/2 t vanilla essence
  • 3/4 C self raising flour
  • 1 T cocoa
  • 3 T milk
  • 150 g glace cherries, chopped
  • 100 g white or dark chocolate, roughly chopped

Directions

  1. Cream butter and sugar, add egg and vanilla and mix well.

  2. Add sifted flour and cocoa, along with milk.

  3. Fold in cherries and chocolate.

  4. Bake in paper lined cup cake or muffin pans at 180oC, approx 12 minutes until firm.

  5. Cool, then if wished, ice with a simple chocolate or vanilla butter icing.

  6. Or: halve and serve with butter as a muffin.
