Rock Cakes

Cook time: 15 minutes
Serves 8 people

Ingredients

  • 2 C self raising flour
  • 1/3 C butter
  • 1/2 C sugar
  • 1/2 t ginger
  • handful dried fruit
  • 1 egg, lightly beaten
  • 5-6 T milk

Directions

  1. Rub butter into sifted flour and ginger.

  2. Mix in remaining ingredients, to make a stiff dough.

  3. Bake spoonfuls of mix on paper-lined tray at 200oC, approx 10-15 minutes.

  4. Cool and serve with butter if desired.
