Chilli popcorn

Ingredients

  • 2 x 115g packets plain microwave popcorn
  • 85g unsalted butter
  • 1 small garlic clove, crushed
  • 1 tsp zest from unwaxed lemon
  • 1/4 tsp dried chilli flakes, crushed
  • good pinch of chilli powder
  • 1 tsp cracked black pepper
  • 1 heaped tbsp sea salt

Directions

  1. Cook the popcorn bags 1 at a time in the microwave, according to packet instructions. Set aside.

  2. Meanwhile, melt the butter in a small pan over a medium heat and add the garlic, lemon zest, chilli flakes, chilli powder and pepper. Mix well, then remove from the heat.

  3. Carefully open a bag of cooked popcorn and pour in half the flavoured butter. Season with half the salt. Hold the top of the bag shut and shake until well coated. Repeat with the second bag. Tip into a large bowl or little paper cups. Serve at once, it will soften if not eaten within 1 hour.
