Corn Bread Chicken Tenders

The original recipe was serving size for 2. I wanted a larger serving size. I don’t really measure this one. I keep a box of Jiffy Corn Bread Mix pours some in pie pan and pour some ranch in another one.

  • 3/4 cup corn bread/muffin mix
  • 9 tablespoons prepared ranch salad dressing
  • 1lb chicken cut into strips or use tenders
  • 6 teaspoons canola oil


  1. •Place corn bread mix and salad dressing in separate shallow bowls. Dip chicken in dressing, then roll in corn bread mix.

  2. • In a large skillet, cook chicken in oil over medium heat for 3-4 minutes on each side or until meat is no longer pink. Yield: 6 servings.
