Roasted garlic with soft cheese and bread

Ingredients

  • 4 garlic bulbs
  • 4 fresh thyme sprigs
  • 4 tbsp extra-virgin olive oil, plus extra to serve
  • 1 crusty loaf fresh bread
  • 250g crumbly goat's cheese

Directions

  1. Preheat the oven to 180˚C/fan 160˚C/gas 4. Using a sharp knife, cut the top off each garlic bulb to expose the tops of the cloves. Discard the tops. Don’t remove the papery skins. Cut out 4 large squares of foil and place a garlic bulb and a sprig of thyme on each. Drizzle each with 1 tablespoon of oil, season, then wrap up tightly. Place on a baking tray and roast in the oven for 35-40 minutes.

  2. Cut the bread into slices. Unwrap the garlic parcels and peel away the papery skins. Squeeze out the soft cloves, then mash and spread the garlic onto the bread. Top with some goat’s cheese. Season with pepper and drizzle with extra oil to serve.
