Rhubarb Cake

Ingredients

  • 2 Tbsp butter (no substitutes) +2 Tbsp+ 1/2 cup
  • 1 C sugar + 1/4 C + 3/4 C
  • 1 egg
  • 2 C flour + 1/4 C
  • 1tsp baking powder
  • 1tsp baking soda
  • 1 C buttermilk
  • 2 C chopped rhubarb
  • 1/2 C evaporated milk
  • 1 tsp vanilla

Directions

  1. Cream 1 C sugar and 2 Tbsp butter together. Add egg. In separate bowl, combine 2 C flour, baking powder, soda, and salt. Alternate adding it to creamed mixture with buttermilk. stir in rhubarb. Pour into a greased 9" square pan.

  2. Combine 1/4 C flour, 1/4 C sugar, 2Tbsp melted butter. Sprinkle over batter.

  3. Cook at 350 for 40-45 min.

  4. For sauce, melt 1/2 C butter in a pan. Add 3/4 C sugar and evaporated milk. Bring to boil; cook and stir or 2-3 min until thickened. Remove from heat, stir in vanilla. Serve with cake.
