Orange Madeira cake

Ingredients

  • 170g unsalted butter, plus extra to grease
  • 170g plain flour, sifted, plus extra to dust
  • 120g fructose or 170g granulated sugar
  • grated zest of 3 oranges and juice of 1
  • 4 free-range eggs
  • 3/4 tsp baking powder

Directions

  1. Preheat the oven to 180˚C/fan 160˚C/gas 4. Grease a 900g loaf tin and dust with flour.

  2. Using an electric hand whisk, cream the butter, fructose (or sugar) and orange zest until fluffy. Whisk in 1 egg at a time, adding a little flour to stop it curdling. Add the orange juice, plain flour, a pinch of salt and the baking powder and mix until combined. Pour into the loaf tin, level the surface. Bake for 50 minutes, or until a skewer inserted into it comes out clean. Cover with foil if it’s looking too dark.

  3. Allow to cool in the tin, then turn out and slice to serve.
