Smoke Roasted Pumpkin Seeds

Ingredients

  • Seeds from 1 pumpkin (we prefer using seeds from pie pumpkins opposed to carving or jack-o-lantern pumpkins)
  • 1 tbsp vegetable oil
  • Salt to taste

Directions

  1. As soon as possible after removing the seeds from the pumpkin, rinse pumpkin seeds under cold water in a colander and pick out the pulp and strings.

  2. The longer you wait to rinse the seeds, the harder it will be to remove the dried on pulp from each seed.

  3. Place the pumpkin seeds in a single layer on an oiled baking sheet, stirring to coat. If you prefer, omit the oil and coat with non-stick cooking spray.

  4. Start your Traeger on the Smoke setting with the lid open for 4-5 minutes. Place the baking sheet with the seeds on the grill grate, close the lid, and smoke for 20 minutes.

  5. Sprinkle your seeds with salt (or Cajun seasoning, cinnamon/sugar, etc) and turn the temperature on your grill up to325 degrees F. Roast the seeds until toasted, about 20 minutes, checking and stirring after 10 minutes. Your pumpkin seeds will be more brown that seeds you buy commercially because they spent the extra time smoking before being roasted. This is normal and just adds to the flavor.

  6. Let cool and store in an air-tight container.
