Chicken Calcutta

Ingredients

  • 4 Garlic cloves
  • 1 tbsp Ginger
  • 2 chillies
  • 1/2 bunch cilantro
  • 1 onion
  • 1 lemon juice
  • cayenne pepper
  • 1/2 tsp curry powder
  • 1 tsp cumin powder
  • ground cloves
  • ground corriander
  • salt
  • 3 chicken breasts cut into pieces
  • oil
  • cinnamon sticks
  • 1 cup chicken stock
  • 1 cup coconut milk
  • 2 tbsp sugar
  • 2 bananas
  • 1 can pinapple
  • cup (handful) golden raisins
  • cup raisins
  • mint 2 springs
  • lemon juice
  • salt
  • naan or rice

Directions

  1. Puree first set of ingredients

  2. Toss chicken with 2 tbsp of mix.

  3. heat oil cook med heat for 10 min

  4. Stir in cinnamon, stock, coco milk, sugar- bring to boil simmer 10 min

  5. Stir chicken into sauce 2 min. combine Sliced bananas and additional ingredients.

  6. Serve with naan or rice
