Lime Basil Shrimp

Ingredients

  • 1 lime
  • 2 tbsp coconut oil
  • 1 lrg onion minced
  • 4 cloves garlic minced
  • 2 lb lrg shrimp (peeled devained)
  • 2 tbsp coconut milk
  • 1/4 tsp salt and lemon pepper
  • 2 tbsp basil

Directions

  1. Grate rind from lime, set aside

  2. Squeeze lime juice into bowl

  3. Melt oil in skillet large. Add onion and garlic cook 8 min stir a lot.

  4. add shrimp and saute 2 min, stir in lime, cook 2 min or until shrimp is pink. remove, stir in basil
