Grandma’s Pancakes

Ingredients

  • 1 quart buttermilk
  • 8 eggs
  • 2 cups flour
  • 1 1/4 teaspoons baking soda
  • 1 1/4 teaspoons salt
  • 2 2/3 teaspoons baking powder
  • 2 2/3 tablespoons sugar
  • 8 tablespoons oil

Directions

  1. Preheat skillet to medium high

  2. Separate eggs, beating egg whites till soft peaks form

  3. Beat together buttermilk, egg yolks, and oil

  4. Sift together flour, soda, salt, baking powder, and sugar

  5. Combine wet and dry ingredient mixtures

  6. Fold in egg whites

  7. Pour 1/4 cup of batter onto hot skillet, cooking approximately 1 minute per side
