Creamy Smashed Potatoes with Spinach

Ingredients

  • 1 1/2 lbs red potatoes, scrubbed and quartered
  • 3 garlic cloves, crushed
  • 1 (6oz) bag baby spinach
  • 1/2 cup fat-free sour cream
  • 1 1/2 tablespoons fresh chives
  • 3/4 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1/4 teaspoon fresh grated nutmeg

Directions

  1. Bring to a boil in a medium saucepan, the potatoes, garlic, and enough cold water to cover. Reduce the heat and cook, covered, until the potatoes are fork tender, 15-20 minutes. Add the spinach, stirring, just until wilted; drain the potatoes, garlic and spinach.

  2. Return the potatoes, garlic and spinach to the saucepan. Add the sour cream and mash with a potato masher until the mixture is chunky. Stir in the remaining ingredients and serve.
