Parmesan Squash Bake

Ingredients

  • 2 medium Zucchini
  • 2 medium Yellow Squash
  • 1 medium sweet onion, diced
  • 1 cup grated Parmesan Cheese
  • 1/4 cup EVOO, divided
  • 2 cloves Garlic, minced
  • Salt to taste

Directions

  1. In a small pan, heat 1TB of OO. Saute onion until soft, about 7 minutes. Add garlic and cook for another minute. Put mixture in the bottom of a 9×9 baking dish.

  2. Slice the zucchini and squash thinly. Layer them in 4 rows across the dish over the onions. Pour OO over the pieces until they are evenly coated. Sprinkle with salt.

  3. Bake at 350 for 30 minutes uncovered. Pour parmesan on top and back for another 15-20 minutes.
