Classic folded omelette

Ingredients

  • 3 eggs
  • 15-30g butter

Directions

  1. Beat the eggs, then season with salt and freshly ground black pepper. Melt the butter in a 15-20cm frying pan over a medium-high heat. When the butter begins to foam, add the eggs. Shake the frying pan gently to distribute evenly.

  2. Start stirring with a table fork, keeping the rounded side of the fork as parallel as possible to the pan’s bottom, while continuing to shake it. After 20-30 seconds, or as soon as the eggs are set but still soft, stop stirring.

  3. Fold the side of the omelette nearest you halfway over itself, as if folding a letter. Grasp the handle of the frying pan from underneath, with your palm facing upwards, and lift the pan to a 45 degree angle.

  4. With your free hand, sharply tap the top of the handle closest to the pan, which will encourage the other side of the omelette to curl over the folded portion. Use the fork to fully fold.

  5. Bring the serving plate to the omelette, then tilt the pan so the omelette falls onto the plate, seam-side down. Serve immediately.
