Spuds with spicy beans and salami

Ingredients

  • 2 x 175g potatoes, scrubbed
  • 420g baked beans
  • 100g salami or chorizo sausage
  • 2 tbsp HP Brown sauce, to serve

Directions

  1. Prick the potatoes with a fork several times and put onto the microwave turntable. Microwave on high for 8 minutes.

  2. Meanwhile, tip the baked beans into a bowl. Peel away and discard the papery skin from the salami or chorizo and cut into chunky slices. stir into the beans.

  3. Remove the potatoes from the microwave with an oven glove and put on serving plates. Heat the beans and sausages in the microwave on high for 2 minutes, stir, then microwave on high for another 2 minutes, or until piping hot.

  4. Cut a cross in each potato. Using a tea towel, gently squeeze it at the base to ease open. Spoon in the beans and sausages and top with HP sauce.
