White chicken chili

Ingredients

  • 2 med onions chopped
  • 1 tblsp olive oil
  • 2 cloves garlic finely chopped or 1/4 tsp garlic powder
  • 3 cups chicken broth = 2 14 oz cans
  • 2 tblsps chopped fresh cilantro
  • 2 tblsp lime juice
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano leaves
  • 1/2 crushed red pepper flakes
  • 1/4 tsp salt
  • 1 can white shoe peg corn drained
  • 2 cans great northern beans
  • 2 cups shredded cooked chicken breast or 2 lg cans cooked chicken breasts
  • Salsa verde to put on top

Directions

  1. Heat olive oil and cook onions and garlic

  2. Stir in remaining ingredients except chicken and salsa verde

  3. Heat to boiling then reduce heat

  4. Add chicken

  5. Cool in crockpot all day on low setting
