Fast Asian fish

Ingredients

  • 225g long grain or basmati rice
  • 4 x 120g skinless salmon fillets
  • 3 tbsp reduced-salt soy sauce
  • 2cm piece fresh ginger, very finely shredded
  • 3 tbsp sweet chilli sauce
  • 4 spring onions, thinly sliced on the diagonal, to serve

Directions

  1. Preheat the oven to 200˚C/fan 180˚C/gas 6. Cook the rice according to the pack instructions. Drain, return to the pan, cover and set aside.

  2. Meanwhile, place the salmon in a shallow backing dish. Combine the soy, ginger and sweet chilli sauce, then pour over the fish. Cover with foil and bake for 15 minutes, carefully turning the fish halfway, or until just cooked through.

  3. Divide the rice between plates and top each with a salmon fillet. Drizzle over the sauce and top with the spring onions to serve.
