Classic potato gratin

Ingredients

  • butter, for greasing
  • 900g waxy potatoes, thinly sliced
  • 200g fresh Parmesan, grated
  • 500ml double cream

Directions

  1. Preheat the oven to 180˚C/fan 160˚C/gas 4. Lightly grease a 2.5-litre deep baking dish with butter. Arrange a layer of potato slices on the bottom of the dish. Season with pepper and a little salt, and sprinkle with some of the cheese. Continue the layering until all the potatoes are in the dish, finishing with the last of the cheese on top.

  2. Pour the double cream evenly over the surface. Bake for 75 minutes, or until the potatoes are tender and the top is a deep golden brown and crisp. Serve immediately.
