Southwest Green Rice

Original recipe was double this but made too much.

Ingredients

  • 1 1/2 T. butter
  • 1/2 cup chopped onion
  • 1 garlic clove, minced
  • 1 cup uncooked rice
  • 6-8 oz. canned tomatillos, drained
  • 2 oz. canned chopped green chiles
  • 15 oz. chicken broth
  • 2 T. chopped fresh cilantro

Directions

  1. Melt butter in large saucepan or skillet over medium heat.

  2. Add onion and garlic. Cook 3-5 min. or until onion is softened, stirring occasionally.

  3. Add all remaining ingredients except cilantro. Mix well.

  4. Bring to a boil, stirring occasionally. Reduce heat to low, cover and simmer 20-25 minutes or until liquid is absorbed and rice is tender, stirring occasionally.

  5. Remove from heath and stir in cilantro.
