Pizzelle

Ingredients

  • 6 eggs
  • 1 c sugar
  • 3/4 c vegetable oil
  • 3 c all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp vanilla (optional)
  • 1/2 tsp anise extract (optional)

Directions

  1. In a large bowl, whisk together the eggs, sugar, and oil.

  2. Mix thoroughly.

  3. Add the flour, baking powder, and optional flavorings.

  4. Mix well to form a homogenous batter.

  5. Set aside at room temperature for 30 minutes.

  6. Oil pizzelle iron thoroughly before heating.

  7. Heat a pizzelle iron until very hot (ca. 5 min.).

  8. Pour 2 tbsp batter onto the iron, close, and return to heat.

  9. Cook until golden brown (30 sec – 2 min depending on the iron).

  10. Repeat until batter is used up.
