Cordial Cherry Mice

can short cut by just dipping the well-drained cherries in chocolate

Serves 60 people

Ingredients

  • 60 maraschino cherries with stems
  • 3 Tbsp. butter
  • 1 lb. chocolate, melted
  • 2 cup powdered sugar
  • 3 Tbsp. light corn syrup
  • 60 Hersey's kisses (I use cherry cordial flavor)
  • sliced almonds
  • small tube red gel icing

Directions

  1. Drain cherries for several hours or overnight.
  2. Combine butter and corn syrup. Stir in powdered sugar ( may need to work with hands). Chill in refrigerator if too soft.
  3. Shape 1/2 tsp. mixture around each cherry. Place on baking sheet lined with wax paper. Chill til firm. Dip into chocolate by the stem. be sure to coat well. Chill to set.
  4. using melted chocolate, attach 2 almond slices to bottom of each Hersey’s kiss to make ears, and then attach to the coated cherry. using red gel icing, place dots for nose and eyes. When serving or giving as a gift, sprinkle a few chocolate sprinkles around on plate for mouse poo !
