Macaroon Kiss Cookies

Ingredients

  • 2 1/2 cups flour
  • 1 Tbsp. + 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 cup butter, softened
  • 6 oz.. cream cheese, softened
  • 1 1/2 cup sugar
  • 2 egg yolks
  • 1 Tbsp. + 1 tsp. vanilla
  • 1 Tbsp. + 1 tsp. fresh orange juice
  • 10 cups sweetened cocoanut, divided use
  • 1 bag (48 pieces) Hersey's kisses

Directions

  1. In a medium bowl, sift flour, baking powder and salt. Set aside. In large mixer bowl, beat butter, cream cheese, and sugar until light and fluffy. Add egg yolks, vanilla and orange juice and beat til smooth.
  2. Mix flour into butter mixture, 1 cup at a time. Beating after each addition. Add 6 cups coconut and beat to combine. Refrigerate dough 1 hour. Remove wrappers from kisses.
  3. Preheat oven to 350 degrees. Shape dough into 1 1/2 inch balls, rolling between palms, then roll in remaining coconut. Place 1 inch apart on baking sheet. Bake 12 -14 minutes, until cookies puff and are very lightly browned. Remove from oven. Immediately press one Hersey’s kiss into each cookie. Return pan to oven aand bake 1 minute more.
  4. Remove pan from oven and cool pan on a rack 10 minutes. Move cookies to wire rack to cool.
