Lemon Honey Chamomile Cookies

this evolved from someone giving me a package of Chamomile tea leaves. I didn’t like the tea, but it makes a really good, fragrant cookie.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 5 chamomile tea bags or 4 Tbsp. loose leaf tea
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1/2 tsp. vanilla extract
  • Zest of 2 large lemons
  • 2 Tbsp. fresh lemon juice
  • 6 Tbsp. honey
  • 1/2 cup sugar for rolling cookies ( may use colored sugars for festive decoration)

Directions

  1. Preheat oven to 350 degrees F.
  2. Put loose tea leaves in food processor, and process until it is very fine. Sift through a strainer to get rid of any large pieces that don’t grind.
  3. Combine the flour, baking soda, baking powder, finely ground tea, and salt in a medium bowl.
  4. In the bowl of an electric mixer, beat together butter and sugar until light and fluffy.
  5. Beat in egg, vanilla, lemon zest, lemon juice, and honey.
  6. Slowly add the dry ingredients, and mix until just combined.
  7. Drop teaspoon-sized balls of dough onto a parchment lined baking sheet about 1 inch apart. Bake 10- 12 minutes until lightly brown.
  8. Variation: Try other herbal tea flavors instead of the chamomile tea- we like Raspberry tea.

  9. But lemon grass or orange blossom herbal are good too.
