Candied orange or Lemon Peel

(from Lucianolinda’s recipe box)

use these in fruit cakes or other baking. Make just whenever you peel a few oranges or lemons for other use.

  • Orange or lemon peel from 3-4 pieces of fruit
  • 4 1/2 cups sugar
  • 1 1/2 cups water


  1. Cut peel in 1/4 inch strips. Place in a saucepan and cover with COLD water. Bring to a boil. Pour off water, and repeat twice more.
  2. Whisk sugar in water. Cook 8-9 minutes to soft ball stage. Add peel. Simmer gently about 45 minutes. Drain. Dry 4-5 hours, or less if using a dehydrator.
