Ingredients

  • 2 cups dried black-eyed peas plus enough
  • water to cover
  • 8 oz. chopped ham
  • 1 quart water
  • 1 medium onion, chopped
  • 1/4 tsp. coarse salt
  • 1/2 tsp. pepper
  • 1/2 tsp. hot pepper sauce
  • 2 cups hot cooked rice
  • 1/2 cup sliced green onions

Directions

  1. Boil black-eyed peas in enough water to cover them for 2 minutes. Remove from heat; cover and let stand 1 hour; drain, discard water.
  2. In a saucepan, bring ham and 1 quart water to a boil for 15 minutes. Add black-eyed peas; cover, reduce heat to low and simmer, stirring occasionally, 45 minutes. Add onion, salt, pepper and hot pepper sauce and return to a boil. Cover, reduce heat and simmer 15 minutes or until peas are tender. Stir in hot rice and green onions and serve.
