Crystal Rock Candy

Ingredients

  • 2 cups water
  • 4 cups sugar
  • 1/2 to 1 tsp. flavor oil (opt.)
  • food coloring (opt.)
  • glass jar
  • skewer or thread

Directions

  1. Wash glass jar thoroughly with hot water. prepare wooden skewers to hang about 1 inch from bottom of jar. Wet the skewer and roll it in sugar, to give a base for growing sugar crystals. Remove pan from heat. Set aside to dry. Put the water in a medium pan a time, stirring after each addition. Continue to stir and boil syrup until all sugar is dissolved. Remove from heat. If using colors or flavors, add them at this point. Stirring to blend. Let syrup cool about 10 minutes, then pour into the jar. Lower sugared skewer until it hangs about 1 inch away from harsh lights, where it can stand undisturbed. Cover jar loosely with plastic wrap or paper towel. Sugar crystals should start to form within 2-4 hours. If there is no change after 24 hours, try boiling sugar syrup again and dissolve another cup of sugar into it, then allow to cool 10 minutes and pour back into the jar; inserting skewer again.
  2. Check back a couple of times a day until rock candy is desired size(don’t let it grow too big and stick to sides of jar). Remove it and allow it to dry a few minutes before eating, or wrapping in plastic wrap.
