Fondant

of the two recipes I have for this, this one is the easiest, and works better.

Ingredients

  • 16 oz. miniature marshmallows
  • 2 Tbsp. water
  • 2 Lbs. powdered sugar
  • flavor extract of choice

Directions

  1. Sprinkle water over the marshmallows in a microwave safe bowl. Microwave to melt, stirring every 15 seconds. Knead the sugar into the melted marshmallows. Use a heavy duty stand mixer with a dough hook. Do not use all the sugar unless you have to . Proper consistency is like Play Doh.
  2. If coloring whole batch, use pastel/ gel food color as you knead, or divide batch to color different pieces. Also add any desired flavor extracts at this time. (Flavoring is advised, but not vital).
  3. When well kneaded, wrap tightly in plastic wrap and let rest 15 to 30 minutes. DONOT refrigerate.
  4. Whenever working fondant, keep surface and hands well oiled with cooking spray to keep from sticking and make glossy. If fondant is too sticky, knead in more powdered sugar.
