Marshmallow Fondant

this one is a little more temperamental than the other one, but good for small batch

Ingredients

  • 8 oz. mini-marshmallows ( 4 cups loosely)
  • 1 Lb. powdered sugar (4 cups + extra for dusting)
  • 2 Tbsp. water

Directions

  1. Heat marshmallows and water in a large bowl in the microwave, 30-45 seconds until smooth and free of lumps. Add colors or flavors at this time of using. or wait to divide batch for multi-color or taste.
  2. Add powdered sugar and begin stirring with spatula. Stir until sugar begins to incorporate, and too hard to stir. Scrape mixture out onto prepared work surface (dusted with powdered sugar). Dust hands and begin to knead like bread dough, working sugar in with hands. Work until fondant is smooth and no longer sticky more sugar only if needed. Too much will make it too stiff.
  3. Fondant can be shaped into characters such as dogs, people or cars. or roll it out into a smooth thin sheet to cover cakes or petit fours.
