Pecan Pie Balls

Haven’t tried this one yet, but sounds good.

Ingredients

  • 2 1/2 cups pecans, toasted, and chopped
  • 1 cup graham crackers, crushed
  • 1 cup brown sugar, packed
  • 1/2 tsp. salt
  • 2 Tbsp. maple syrup
  • 1/4 cup bourbon, brandy or spiced rum
  • 1 tsp. vanilla
  • 7 oz. dark chocolate bark
  • 1 tsp. coarse sea salt (opt.)

Directions

  1. Combine first four ingredients in a large bowl. Add maple syrup, bourbon and vanilla. Use hands to make sure it is mixed thoroughly. Form balls by scooping a tablespoonful of mixture and rolling in hands.
  2. Place balls on cookie sheet lined with parchment paper. ( After all are made, roll balls again with slightly dampened hands to smooth before dipping. Place cookie sheet In freezer for 2 hours.
  3. Melt chocolate bark. Dip frozen balls in chocolate, then place on parchment lined cookie sheet. Sprinkle a few grains of coarse sea salt on balls before chocolate sets; if desired.
