Santa Fe Rice and Beans

Cook time: 30 minutes
Serves 4 people

Ingredients

  • 1 cup frozen or 1 can of corn
  • 1 can diced tomatoes w/ green chilis
  • 1 can pinto or kidney beans
  • 1 can black beans
  • 2 cups cooked brown rice
  • 3/4 c Mexican cheese blend, or cheddar
  • 3/4 c light sour cream
  • 3-5 scallions(green onions) or 1/2 onion chopped
  • 1/4 t chili powder, salt and pepper

Directions

  1. Preheat oven to 350

  2. Mix all ingredients and place in 2 quart casserole. Sprinkle top with more cheese.

  3. Bake for 30-45 minutes
