Winter Fruit Macaroons

Ingredients

  • 1 can (14oz.) sweetened condensed milk
  • 2 1/4 cups flakes coconut
  • 2 1/4 cups coarsely chopped dates
  • 1 1/2 cups coarsely chopped walnuts
  • 1/4 cup dried cherries
  • 3/4 cup dried cranberries
  • 3/4 tsp. vanilla extract

Directions

  1. Preheat oven to 350 degrees. In a large bowl, mix all ingredients. Drop by tablespoonfuls 2 inches apart onto parchment paper-lined baking sheets.
  2. Bake 8 to 10 minutes or until light brown. Cool on pans 5 minutes. Remove to wire racks to cool. Store in an airtight container.
  3. Option: freeze cookies, layered between waxed paper, in freezer containers. Thaw before serving.
