Custard for Pies

My mother used to double this recipe, then divide it at the end and add different flavors to make two different pies. Use left over egg whites to make meringue for topping.

Ingredients

  • 3 cups whole milk
  • 1 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/4 tsp. salt
  • 3 egg yolks, slightly beaten
  • 1 1/2 Tbsp. butter
  • 1 1/2 tsp. vanilla extract

Directions

  1. In a glass bowl, combine sugar, flour and salt; keep at hand.
  2. In another small bowl, beat 3 egg yolks lightly, set aside.
  3. In a large saucepan, heat milk. Gradually add dry ingredients into hot milk, stirring constantly; cook until thickened.
  4. Stir a small amount of hot liquid into beaten egg yolks; stirring until combined, then stir yolks into hot mixture. Bring to a boil, stirring constantly. Remove from heat and blend in butter and vanilla. Let sit 10 minutes.
  5. Add; Chocolate, coconut, lemon juice or bananas to custard. Then pour into baked pie crust.
