Kahlua Truffles

Ingredients

  • 3/4 Lb. good quality milk chocolate chips
  • 3/4 Lb. food semi-sweet or dark chocolate
  • chips
  • 1 cup heavy cream
  • 2 Tbsp. butter
  • 1 oz. Kahlua liqueur
  • 2-3 tsp. instant coffee powder
  • 1/2 to 3/4 Lb. dipping chocolate
  • 1/2 to 3/4 Lb. white dipping chocolate
  • Assorted sprinkles of your choice

Directions

  1. Place cream, coffee powder and butter in a bowl. Microwave on high until cream is almost simmering and butter is melted.
  2. Stir in chocolate chips, Kahlua and coffee to taste. Stir until chocolate is melted and smooth. If needed, microwave 30 seconds at a time, stirring until smooth.
  3. Refrigerate overnight until firm.
  4. Line 2 cookie sheets with foil.
  5. Use a small cookie scoop to form balls. Using gloves, roll between hands to smooth.
  6. Refrigerate again a couple of hours.
  7. Melt dipping chocolate, and dip truffles. Dip half in ark chocolate and half in white, as you wish. Drizzle opposite color chocolate over truffles. use candy sprinkles as you chose.
  8. May use: Irish cream, Amaretto, rum, etc. instead of Kahlua and coffee powder.
