Biscoff Buckeye Truffles

Biscoff cookie spread is a creamy buttery spread made from speculoos cookies, similar to peanut butter, but not the flavor.

Ingredients

  • 1/2 cup butter, softened
  • 1 cup creamy Biscoff cookie spread (see note)
  • 1 tsp. vanilla extract
  • 2 cups powdered sugar
  • 2 cups semisweet chocolate chips
  • 1 Tbsp. shortening or coconut oil

Directions

  1. In a large bowl using a hand-held mixer or stand mixer fitted with paddle attachment, cream butter, Biscott spread and vanilla extract for 2 minutes or until light and fluffy. Add the powdered sugar in 1/2 cup increments, beating well between additions.
  2. Divide and shape dough into about 35 balls. Set aside.
  3. In the top of a double boiler, melt chocolate chips and shortening, stirring until smooth. ( Or whatever method of melting you prefer).
  4. using a spoon, dip Biscoff balls in chocolate, leaving part of the top exposed, if desired, and let the excess chocolate drip off. Place on parchment or wax paper. Refrigerate until chocolate sets.
  5. Makes 35 candies

  6. Note: Look for iscoff cookie spread in the produce and bakery departments of the grocery store.
